
Muffin Pot Pies

I didn't invent this idea but I've certainly made it my own and my family will agree that it should be a staple of our meal plan. In fact, I couldn't post a photo because they were all eaten before I had a chance to snap a photo. This recipe is so simple. All ingredients can be substituted with personal preferences. Use leftover thanksgiving turkey instead of chicken for example. Just about any meat variety paired with the sauce and vegetables of your choice will do. Even the type of noodle used is a matter of preference and if you think the noodles are too heavy, try rice instead or eliminate them all together. Mix together ingredients with a cheese sauce or any variety of cream soup. For a breskfast twist try sausage, eggs and gravy. And don't get me started with all the dessert ideas. Personal pies would make a delicious yet super easy dessert. The combinations of possibilities seem endless.

Preheat oven to 350º or what biscuit packaging calls for.

Boil noodles until cooked then drain excess water

Boil chicken until cooked thoroughly

Thaw frozen mixed vegetables in microwave if needed

Cut chicken into bite size pieces

In a large bowl, mix together cream of chicken soup, chicken, vegetables, and noodles. Stir until evenly distributed and saturated

Flatten biscuits and press into muffin tin. 1 biscuit per cavity. Recipe amount calls for 2 -12 count muffin tins.

Scoop mixed ingredients by spoon and fill in biscuit centers. Ingredients should fill 24 cavities.

Place tins in oven and cook 3-5 minutes longer than what biscuit package calls for. (Approx 20-25 minutes)

Remove tins from the oven and use a fork to loosen pies from muffin tin and serve.

Amount feeds 8-12 people or is good for reheating for a second meal. Ingredients can easily be reduced or expanded to accommodate less or more people.
