Ingredients

  • 1 1/2 cupAll purpose flour
  • 1 cupGranulated sugar
  • 1/2 cupSifted cocoa powder
  • 1 tspBaking soda
  • 1/2 tspSalt
  • 1 largeEgg
  • 1 stickUnsalted butter
  • 1 cupButtermilk
  • 1 tspVanilla extract
  • 1 cupHot water
  • 6 ozCream cheese
  • 1/4 cupSugar
  • 6 ozBittersweet chocolate chips
  • 1/4 cupFlaked sweetened coconut

    Preheat oven to 350

  2. 2

    Line muffin tin with muffin tin liners. Add 2 tbsp water to empty wells.

  3. 3

    Combine flour, sugar, cocoa powder, baking soda & salt.

  4. 4

    Add egg, butter (softened), buttermilk, vanilla & hot water (last).

  5. 5

    Beat with electric mixer until smooth.

  6. 6

    Divide batter into 16 wells.

  7. 7

    In small bowl, beat cream cheese with sugar.

  8. 8

    Fold in chocolate chips and coconut.

  9. 9

    Drop cream cheese mixture into center of cupcakes.
