Cute Candy Cookies

I saw a cookie with a candy window on a TV show awhile ago. I thought if it could be made with a black cocoa cookie, it'd make for a nice contrast and be really cute, so I gave it a shot. When I put the candy in before baking the cookie dough would become smashed or stick to the candy and it was quite difficult. So I changed the procedure to add the candy during the middle of baking.

Try to fill in the gaps with smashed candy bits as much as possible. The baking may differ depending on your household oven, so adjust the temperature and baking time as necessary. If the temperature is too hot, the candy may burn. It might be a good idea to have candy bits left over when baking so you can fill in any gaps. For the candy, I use orange and pineapple flavored Sakuma drops. Recipe by yotiko

Ingredients

  • 80 grams☆Cake flour
  • 5 grams☆Cocoa powder
  • 15 grams☆Black cocoa powder
  • 50 gramsButter
  • 40 gramsSugar
  • 1Egg yolk
  • 1 tbspMilk
  • 1few drops Vanilla extract
  • 10pieces Candy

Steps

    Soften butter and knead until it whitens. Add sugar and mix well. Add egg yolk, milk, and vanilla extract and continue to mix.

    Sprinkle the ☆ dry ingredients and mix in a cut and fold motion. At a certain point, you can start mixing with a knead-like cut and fold motion. Form into a lump and refrigerate for 30 minutes.

    Use a rolling pin, etc to smash the candy into small pieces. It'll scatter, so you can put it in a plastic bag and then smash.

    Once you've refrigerated the dough for 30 minutes, preheat your oven to 160℃. Roll the dough out to 3 to 5mm thick and use a cookie cutter to cut shapes. Also use a cutter to cut out a shape in the middle. Bake at 160℃ for 8 minutes.

    Remove the cookies from the oven and put the smashed candy bits in the opening. Try to fill in gaps as much as possible. Then bake again at 160℃ for 5 minutes.

    And it's complete. Let it cool on a flat surface and don't move it around. If there are any gaps in the candy, fill in with more candy bits, and bake on low heat (140℃ to 150℃) until the gaps are filled in.
