Ingredients

2 servings
  1. 12 ozskinless, boneless chicken breasts (about 2 breasts)
  2. 1/2 cupchicken broth
  3. 2 tbspsoy sauce
  4. 2 tbspfresh basil or 2 tsp. dried basil, crushed
  5. 2 tspcorn starch
  6. 1/2 tspcrushed red pepper
  7. 1/2 tspturmeric
  8. 1 tbspoil
  9. 1 cupsliced carrots (about 2 medium carrots)
  10. 2 cupbroccoli florets
  11. 1red or green pepper, cut into chunks
  12. 1/4 cupcashews or peanuts

Steps

  1. 1

    Cut chicken into bite-size strips and set aside.

  2. 2

    Combine broth, soy sauce, basil (if using dried), corn starch, red pepper, and turmeric in a small bowl; set aside.

  3. 3

    Pour oil into a large wok and heat over medium-high heat.

  4. 4

    Add vegetables to the wok; cook and stir for 3-4 minutes or until veggies are crisp-tender.

  5. 5

    Remove vegetables from the wok.

  6. 6

    Add chicken and cook for 3-4 minutes while stirring, or until chicken is no longer pink.

  7. 7

    Push chicken from the center of the wok.

  8. 8

    Stir the sauce, add to the wok’s center, and cook and stir until thickened and bubbly.

  9. 9

    Return cooked veggies to the wok;

  10. 10

    Combine veggies and chicken with the sauce, add fresh basil (if using), and stir until heated through. Serve over white rice or Asian noodles.
