Ingredients

8 servings
  1. 1good size piece of papaya (a quarter of a medium sized or half of a small one)
  2. 1 smallred onion
  3. 1 largetomatoe (an heirloom variety might add some additional color)
  4. 12-3 inch piece of freh turmeric root (optional, but adds a pleasant bite to the salsa)
  5. 1 bunchcilantro
  6. 1juice of one lime
  7. 1 tbspsugar
  8. 1salt and pepper to taste
  9. 1 tbspbalsamic vinegar (optional)

  1. 1

    Chop all vegetable ingredients as rough or fine as you like.

  2. 2

    Mix all ingredients in a bowl with the lime juice, sugar, salt/pepper and vinegar.

  3. 3

    Grate the turmeric root over the bowl (optional)

  4. 4

    Blend everything together and let sit for a few minutes before serving to allow flavors to develop.

  5. 5

    Serve with tortilla chips. I like black bean tortilla chips or beet tortilla chips. Both add color and additional zestiness to the dish.
