Tomato Cottage Muffin
My sister-in-law gave me most of this recipe and I added the cheddar cheese and the bacon. It was good before I did it and now I think it is better, just not as healthy. Don't tell anyone, but I don't like cottage cheese. I like it like this, though.
Tomato Cottage Muffin
My sister-in-law gave me most of this recipe and I added the cheddar cheese and the bacon. It was good before I did it and now I think it is better, just not as healthy. Don't tell anyone, but I don't like cottage cheese. I like it like this, though.

Split and toast English muffin to desired setting. (These directions assume only half of the muffin is used. Double the ingredients if using the whole muffin)

Place a slice of cheddar cheese on the muffin.

Slice tomatoes to desired thickness and lay it on top of the cheddar. Season with salt and pepper to taste.

Put approximately 2 Tablespoons of cottage cheese on the tomato, enough to cover the tomato.

Sprinkle crumbled bacon on the cottage cheese.
