I eat at this local Jamaican restaurant in my neighborhood and I always used to ask the cooks for there jerk recipe, they would laugh and say we cant tell you... If we tell you, you wont buy ours anymore. After about 2 years of persistence I finally got it out of them.... Walkers Wood!!!!

Clean chicken with lemon juice.

Rub walkers wood seasoning all over chicken, get up in there, try to get under the skin, let it do its magic over night. (24 hours is key)

Preheat oven to 225, place chicken in a roasting pan skin side up, place in the oven. For 6 hours on the middle rack. Flipping them every 2 hours.

For remaining 10 minutes put on broil to get a nice crispy skin.

Remove chicken from the pan and save dripping, let cool and remove as much fat as possible, and use dripping s to make a gravy stirring in flour.

Grab a Red Stripe or a Guinness and enjoy your chicken whith some rice and cabbage.
