Ingredients

4 servings
  • 1chopped finely onion
  • 5 clovegarlic smashed & chopped
  • 1tomato finely chopped
  • 1/2 cupboneless chicken chopped
  • 4 tbspbrown rice
  • 1/2 cupchicken stock
  • 5chopped figs
  • 4 slicelemon
  • 1 tspbrown sugar
  • 4chopped olives
  • coriander to garnish
  • olive oil
  • salt

Steps

    Start with olive oil in a pan and saute the onions and garlic

  2. 2

    Put in the chicken and cook.

  3. 3

    Then add the tomatoes and saute

  4. 4

    Add brown rice and mix well

  5. 5

    Pour in some chicken stock and cover the pan to let the rice cook. Add salt to taste

  6. 6

    Open the lid while cooking add the chopped figs, brown sugar and olives. Cover it again.

  7. 7

    After a couple of minutes add the lemon slices and further cook for couple of minutes. You can add your desired quantity of chicken stock to make it soupy.

  8. 8

    As the rice is completed cooked. Add the Coriander leaves on top to garnish.
