Chicken
1/3 cupFlour
1 tspBlack Pepper
1 tspSalt
1 tbspPaprika
1/2 cupVegetable oil
1 lbDiced Chicken Breast
Orange Sauce
1 tspOrange Rind
1/3 cupBrown Sugar
1 tbspOnion
1 tspDiced Garlic
1/2 cupOrange Juice and Ketchup
1 tbspEscellion and Butter

Season Chicken breast with Salt and Pepper

Add paprika to flour and mix. Place diced chicken breast into flour mixture and coat well.

Heat oil in a pan and place chicken in oil. Fry until crispy golden brown. Drain on paper towel.

Place a small dab of butter in a seperate pan over heat. Add onion,garlic and escellion. You may add a little ginger or hot pepper for added flavour. Turn to low heat and add in orange juice and sugar.

Add ketchup and orange rind and bring to a boil..let cook until starts to thicken then place chicken piece in the sauce and coat well.Turn off heat and let rest for 2 minutes. Serve with rice, potatoes or dish of your choice. Enjoy!!!

If you prefer pineapple chicken then replace orange juice and orange rind with equivalent pineapple juice and 1/2 cup pineapple chunks
