Ingredients

  1. 1 1/3 cupWhole Wheat Pastry Flour
  2. 1/2 cupOrganic Sugar
  3. 1/4 cupNatural Brown Sugar
  4. 1 1/2 tspBaking Soda
  5. 1 tspGround Cinnamon
  6. 1/4 tspSalt
  7. 2Eggs
  8. 2/3 cupCanola Oil
  9. 1 tspVanilla Extract
  10. 1Diced Fuji Apple
  11. 1/2 cupSeedless Raisins
  12. 1/2 cupGrated Carrots
  13. 1/2 cupFinely Chopped Walnuts
  14. 1/4 cupUnsweetened Coconut

Steps

  1. 1

    Preheat oven to 350

  2. 2

    In large bowl, mix together dry ingredients

  3. 3

    In separate bowl, mix together wet ingredients

  4. 4

    Add wet ingredients to dry ingredients

  5. 5

    Add chopped apples, carrots, walnuts, and coconut and stir gently until we'll combined

  6. 6

    Fill muffin cup about 2/3 of the way

  7. 7

    Sprinkle unsweetened coconut on top of the muffins

  8. 8

    Bake for 25-30 minutes, or until cooked through
