I am SO excited to share this recipe because of how great it tasted. I love how a few ingredients actually can make an amazing side dish, and this one is a perfect example of that! The next time you are thinking of making mashed potatoes, or any other potato side dish, you have got to try this! After washing the potatoes really well and scrubbing off the mud and other unnecessary bits sticking on it, cook them until they are fork tender in a pot of boiling water

While the potatoes are cooking away, preheat your oven to

Mins or so later the potatoes should be cooked through. After drying them on a kitchen towel, place them on a baking sheet (that is lined with foil or wax paper, you don't want the potatoes to stick to the sheet!). Using a meat tenderizer or a potato masher "smash" each potato to a 1/2 or 3/4 inch thickness. Drizzle the EVOO, and sprinkle some salt and pepper

Allow this to bake in the oven for 15mins, after which flip the potatoes and let it cook for another 15mins

In a bowl mix together the garlic, parsley, lemon zest and the paremesan cheese. Once the potatoes get a nice crispy look to it, take it out of the oven and toss it with the gremolata. Serve hot!

Talk about a great alternative to mashed potatoes! Will go perfectly well with roast chicken or will be a yummy addition to a vegetarian meal as well
