Preheat oven to 375°. Butter or spray muffin pan,or put in cupcake liners.Set aside

Mix dry ingredients together(flour,sugar,baking powder,soda,salt and cinnamon) in a bowl.In another bowl mix the pumpkin,melted butter,egg and vanilla.

Add wet ingredients to the flour mixture and stir from hand JUST until mixed.Spoon into muffin tins about 2/3 or half full.You will get 6 to 7 muffins depending on how much you put in each liner and also how much you lick:)-

Mix the stresuel ingredients in a small bowl until crumbly.Sprinkle evenly on top of the unbaked muffins.

Now pop them in the oven and bake for 15 - 20 minutes or until a toothpick comes out clean and the center springs back when you touch it.Let them sit in the pan for a bit before taking them out.They are best served warm but are still good after a couple of days.
