Ingredients

  • 2 cupself raising flour
  • 1 1/2 cupbrown sugar
  • 1/2 tspground ginger
  • 2 tspcinnamon
  • 100 gramsbutter
  • 2 eacheggs
  • 1 cupmashed cooked pumpkin
  • 1/2 tspbaking soda

    Heat oven to 200°C/400°F

  2. 2

    Dont use pureed pumpkin or over cooked pumpkin.

  3. 3

    Mix dry ingredients together.

  4. 4

    Melt butter add eggs and beat well.

  5. 5

    Mix in mashed pumpkin then add to the dry mixture.Fold gently.Most recipes say dont overmix.I like to mix my muffins alot.As I like them to rise on top.Plus mine always seem to be light in texture rather than heavy.I leave it up to the individual to mix how they wish.

    Spoon into muffin paper cases or into greased muffin tins.Cook 15 -18 mins

  7. 7

    If you wish melt another 50grams of butter.Mix1 teaspoon of cinnamon and 1/2 cup brown sugar.Dip muffins into butter and sprinkle sugar cinnamon mixture on top
