Pumpkin Muffins

I was inspired by some good recipes on Pinterest but in particular one on www.chelseasmessyapron.com, so I've just changed a few things.
The whole batch is ~1,050 calories, so you can do the math for each muffin you make.

Preheat oven to 350.

Combine ground oat flour, spices, salt, baking soda and baking powder in one bowl. Mix well.

In a separate bowl, combine pumpkin purée, honey, sugar, egg, and vanilla. Beat lightly.

Pour the dry ingredients into the wet ingredients bowl and beat quickly. Do not over mix or the muffins will become too dense.

Fold in cranberries and chocolate.

Spray muffin tin (I use baking spray). Fill cups. The muffins do not rise as much as flour recipes, so they stay about the same size.

Bake at 350°F for 8-12 minutes (probably ~15 minutes for full size muffins). I live at about ~4,500ft. and they took about 10 minutes for the mini muffin pan.
