Ingredients

20 servings
  • 3.5 kgmutton
  • 500 gramsonion chopped
  • 500 gramsonion grinded
  • 150 gramsgarlic paste
  • 100 gramginger paste
  • 2 tablespoonjeera powder
  • 4 tablespoondhaniya powder
  • 2 teaspoonred chilli Powder
  • 1.5 tablespoonmeat masala
  • 4 tablespoonraw papaya paste
  • 1 tablespoonjeera seeds
  • 2bay leaf
  • 2-3dry red chilli
  • 4-5 podsgreen cardamoms
  • 4-5cloves
  • 2 stickscinnamon
  • 1 tablespoonturmeric powder
  • As neededoil and ghee
  • To tastesalt
  • As neededwarm water

Steps

  1. 1

    At first marinate the washed mutton with onion slices(1/2 portion of the quantity) ginger garlic paste (1/2) turmeric powder,red chilli Powder raw papaya paste and oil.keep it for atleast 2 hours.

    Now heat oil in a wide pan add the jeera seeds whole red chilli,bay leaf and whole garam masalas

  3. 3

    Add onion garlic ginger paste saute well till the raw smell disappears

  4. 4

    Add jeera dhaniya powder and red chilli Powder mix well

  5. 5

    Now add the marinated mutton and saute well adding salt and turmeric

  6. 6

    Keep it on a low heat with a lid on it

  7. 7

    Keep stirring so that it will not burn

  8. 8

    Finally when the mutton starts to leave oil add warm water and cover it for 20 -30 mnts

  9. 9

    Finally heat ghee in a tadka pan add garam masala powder and pour it into the mutton curry

  10. 10

    Remove the curry from heat and serve hot
