Ultra-Rich Peanut Butter Pie

Ingredients

  1. 2/3 cupgranulated sugar
  2. 1 Tblsall purpose flour
  3. 2 1/2 Tblscornstarch
  4. 1/2 tspsalt
  5. 3 cupsmilk
  6. 3large egg yolks; lightly beaten
  7. 3/4 cuppeanut butter
  8. 1 Tblsbutter
  9. 1 (9 inch)chocolate pie crust
  10. 1egg white
  11. 2 ozchocolate chips, melted

Cooking Instructions

    Preheat oven to 375 degrees. Brush pie crust with egg white and bake for 5 minutes.

    Combine sugar, flour, cornstarch, and salt in saucepan; mix well. Stir in milk.

  3. 3

    Cook mixture over medium-low heat until thickened, stirring constantly. Remove from heat.

    Stir a small amount of hot mixture into egg yolks. Pour this back into pan and stir.

  5. 5

    Bring mixture to a boil. Boil for 1 minutes, stirring constantly. Remove from heat.

  6. 6

    Stir in butter and peanut butter. Cool slightly.

  7. 7

    Pour into prepared pie crust and cool completely.

    Melt chocolate chips in microwave. Drizzle over cooled pie. Chill for several hours before cutting.
