Simple pilau recipe

When I walked in the butchery and bought the piece of meat. I knew i was going to prepare beef stew, spinach with Ugali. As I scrolled through recipes i kept bumping into pilau and other rice dishes. And just like that diner was changed to pilau despite the fact that I was out of soy sauce and tomato paste. Here is my simple pilau recipe.

Ingredients

  • 1/2 kgrice
  • 1/2 kgmeat
  • 5medium sized onions
  • 6medium sized potatoes
  • 2small pieces Ginger
  • 6 clovesGarlic(Adjust to your liking
  • Whole pilau masala
  • 1 CupBeef broth
  • 2 CupsHot water

    When using whole pilau masala, heat them in a pan first before grinding. Its easy to work on it when its warm, Careful not to burn, the heat should be very low.

    How i like my pilau masala after grinding. If you like a very smooth texture... You can warm it up and grind again, repeat till you achieve your desired texture. Alternatively just buy the ready made masala.

    In a pan/cooking pot boil the meat. When almost cooked drain the water and set aside we will use it later as broth. Add onions and little oil.

    Fry under medium heat as you stir until its transluscent.

    Lower the heat and add ginger and garlic. Keep stirring for a minute or two to prevent it from sticking to the pan.

    Add the pilau masala and stir for a minute.

    Put the potatoes and mix.

    Then the rice and mix them until well combined.

    Add the broth and water. Increase the heat to Medium and bring to boil. Cover.

    As pilau is cooking prepare the kachumbari.

    When the rice is almost dry. Check to see if the potatoes and rice are almost cooked by inserting a tooth pick in the potatoe and pressing the rice between your fingers.

    Reduce the heat to low and cover, The rice will cook with the steam.
