Ingredients

8 servings
  • 500 gpickled grape leaves unrolled and rinsed
  • 3lamb cutlets, enough for a layer
  • 3potatoes peeled and sliced to rounds
  • 3 cupsmedium grain rice rinsed and soaked for 30 min
  • 4tomatoes finely chopped
  • 1onion finely chopped
  • 4garlic cloves finely minced
  • 1parsley bunch finely chopped
  • 1/2coriander bunch finely chopped
  • 1dill bunch finely chopped
  • 1 tbsptomato paste
  • 2lemons, juiced
  • 1 tbsppomegranate molasses
  • 1 tbspsalt
  • 1 tspblack pepper
  • 1 tspcumin
  • 1 tsptumeric
  • 1 tspdried coriander
  • 1 tspdried mint
  • 1 cupbroth season with tomato paste salt lemon and molasses
  • Olive oil

Steps

  1. 1

    Prepare the stuffing which include ingredients from rice to mint. Mix together, adjust seasoning and set aside

  2. 2

    Prepare your a suitable size pot. I used my 7 liters pressure cooker

  3. 3

    Splash some olive oil in the bottom. Line the bottom with useless grape leaves

  4. 4

    Layer one or two layers of potato slices. Season with salt and pepper after each layer

  5. 5

    Place the lamb in a single layer and season

  6. 6

    Start rolling and layering the stuffed grape leaves

  7. 7

    When finished, pour over the seasoned broth

  8. 8

    Cover well and cook on medium low heat for about 2 hours. I place a plate upside down on the top to make sure everything is snug when cooking.

  9. 9

    When cooked, flip the pot carefully over a large plate. If all is well, it will be a magnificent flip
