Baingan bharta is a tasty and easy recipe and my favourite too.

First beat the brinjals from all the sides with the rolling pin and apply few drops of oil and pierce knife from all the 4 sides. Now keep it on the gas flame and keep it turning and let it roast on all sides. Now keep it in the water and peel it

Pierce the knife and check if there r any worms. Cut the brinjal wit the knife and mash it nicely

Cut all the vegetables and arrange them in a pot or pan

Mix it well with the fork or masher for 5 minutes, add salt and other spices and mix well for 5 minutes

Friends it's a No Cooking on the Gas Recipe. So do all the procedure without gas. Now Keep the piece of coal on low flame and let it bcom red hot

Now make a hollow space in the bharta and put the burnt coal and pure ghee or butter on it and immediately put an air tight cover so dat the Smokey flavor should incorporate in the bharta

After half an hour open the pot or pan and remove the coal.Now mix the bharta continuously for 5 min and your smokey flavoured crunchy baingan bharta is ready
