A perfect party appetiser that would appeal to all age groups or an easy-peasy weekend snack!
Steps

In a large mixing bowl combine all the ingredients except oil and potatoes

Mix well and rest the batter for 10 minutes

Post the resting period, add the mashed potatoes and mix well to see no lumps exist

Check the seasoning and adjust if needed at this stage

Heat enough oil for deep frying in a wok and spread the cornflour on a plate

Scoop 2 tbspn of the mix and roll cylindrical

Coat well with cornflour and deep fry until brown and crisp
- 8
Rest the fried potato fingers on an absorbent paper for few minutes
- 9
Serve warm with the choice of your sauce/dips
