Ingredients

  • 1butternut squash
  • 1 Tbspbutter
  • 1small onion chopped
  • 1/2 pkgPhiladelphia cream cheese
  • 6 cupschicken broth
  • 1/4 tspcayenne pepper
  • to tasteSalt and pepper

Steps

  1. 1

    Slice the squash in half lengthwise and remove seeds.

  2. 2

    Roast squash until tender (about 1 hour) at 350 degrees.

  3. 3

    Let the squash cool and peel.

  4. 4

    Saute onion in 1Tbsp butter.

  5. 5

    Add the squash, cream cheese, chicken broth and cayenne pepper.

  6. 6

    Puree mixture and bring to a boil. Reduce heat and simmer for about 30 minutes.

  7. 7

    Season with salt and pepper to taste.

  8. 8

    Enjoy!
