Finely chop the onion and fry in a large frying pan on a low heat until the onions are lightly browned

Crush the garlic, add to the pan and fry for 1 minute. Be careful not to burn the garlic.

Chop the sun dried tomatoes and add to the pan

Add the tinned tomatoes, tomato puree, capers and red pepper and cook on a slow heat for 10-15 minutes until the peppers are soft

Season with salt and fresh oregano, stir for 1 minute and serve with pasta and plenty of fresh parmesan cheese
