Sieve flour then add with sugar.

In a large bowl beat eggs, vegetable oil, coconut milk for 3 minutes.

Add vanilla essence. Add flour bit by bit as well as full cream milk until its creamy but not watery.

Add dessicated coconut and chopped pecan till well mixed.

Use a big spoon to pour the batter in to muffin pans. Bake for 15 mins at 180 degrees.
