Ingredients

  1. 2 lbsFresh silver salmon filets. Deboned, deskinned, cubed 1"
  2. 1red onion, slivered
  3. 1 tspminced garlic per jar
  4. 1lemon slice per jar
  5. For pickling juice
  6. 3 qtswater
  7. 1 qtwhite vinegar
  8. 1/2 cupkosher salt
  9. 6 tbspickling spice
  10. 3 tbsbrown sugar
  11. Brine for fish
  12. 1/4 cupbrown sugar
  13. 2 tbskosher salt

Cooking Instructions

    Prepare fish. Mix brine ingredients into fish. Brine at least 2 hrs.

    Sterilize jars lids and rings in boiling water.

    Mix pickling juice ingredients in a pot. Bring to a boil.

    Pack jars. Place an onion slice in the bottom. Then lemon, then garlic. Fill with raw cubed salmon. Pour boiling pickling juice over top.

    Wipe mouth of jar with a damp cloth.

    Directly out of boiling water place lids on with tongs. Tighten rings. Place in fridge. Will be ready in 4-5 days. Will last up to 6 weeks. But not in my house. Lol.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
