Steps

Boil the potatoes in salted water for 10 - 15 minutes. Then peel and set to cool.

Slice the tomatoes and potatoes into meduim slices.

In a bowl, mix the seasoning.

Rub the seasoning into the vegetables.

In an oil drizzled pan, alternate a pototato slice then a tomato slice, in a circular motion to fill the pan.

Cook the vegatables on medium heat for a few minutes.

In the same bowl where you mixed the seasoning, whisk the eggs.

Pour the eggs onto the vegetables, then let it cook on low heat for 7 -10 minutes.

Remove from the stove, the eggs on the surface should still be runny. Add the cheese on top, and put under the grill to melt the cheese and continue to cook the eggs for 3 - 5 minutes.
