Rinse and soak samp overnight

Drain water then pour in the pot with water and pinch salt and boil until soft

Add peeled potatoes and carrot boil until soft

In a pan fry chopped onion with rajah then pour into the samp pot

Add beef stock and green pepper simmer for 5 mins

Stir and mash the samp combine well and serve warm
