Ingredients

  1. Marinated chicken:

  3. Salt to taste
  4. 1lime
  5. Sambal matah ingredients:
  6. 15shallots (thinly sliced)
  7. 3 stalkslemongrass (use the white part, thinly sliced)
  8. 5kaffir lime leaves (remove the stem, thinly sliced)
  9. 15chilies (mix of red bird's eye and curly red chilies, thinly sliced)
  10. 1 teaspoonsalt (adjust based on the amount of oil used)
  11. 1/2 teaspoonsugar (adjust based on the amount of oil used)
  12. 1 teaspoonflavor enhancer (such as MSG)
  13. 1lime
  14. as neededHot oil

Cooking Instructions

    Rub the chicken with 1 lime and salt, let it sit for 15 minutes, then fry until crispy, and shred (do not discard the leftover frying oil).
