Cooking Instructions

Rub the chicken with 1 lime and salt, let it sit for 15 minutes, then fry until crispy, and shred (do not discard the leftover frying oil).

In a bowl, mix shallots, chilies, kaffir lime leaves, and lemongrass. Add lime juice, salt, sugar, and flavor enhancer. Pour hot oil over the mixture (reheat the leftover chicken frying oil until it smokes). Taste and adjust seasoning.

Arrange the shredded chicken on a plate, then pour the sambal matah over it (I prefer not to use all the oil from the sambal matah to avoid it being too oily).
