This relish tastes really fresh and is delicious with any type of grilled fish. Don't discard the papaya seeds! They have a great use! Read on!

Soak the chopped onion in iced water for 30 minutes

Drain the onion then mix with the rest of the ingredients

Let rest in the fridge for at least an hour before serving

Keep those seeds!

They taste like a combination of black peppercorns and mustard seeds. Wash and let them dry naturally for a few days in a warm place then put them into an old pepper grinder to use as seasoning. Don't grind them all at once as they're better freshly ground. Excess can be stored in the freezer. Just take out a tsp at a time and use it as you need it. When kept frozen, papaya seeds can retain their nutritional value for 6 to 12 months. Defrost in the fridge overnight before use
