Heat oil in a pan sauté chopped onion and curry leaves when little golden brown add chopped tomato

Add turmeric powder and red chilli powder, salt etc sauté for 2 mins or tomato should be soft

Add cut brinjal length vise. Cover with lid. Cook on med heat when soft brinjal

1cup urad dal. Soak in 2 cups of water for 1/2 an hour

Add salt haldi powder garam masala 1/4 tsp each

Add 1/4 tsp each garlic and ginger few curry leaves 1/8 tsp Heeng powder

Now microwave for 14 mins after 10 mins stir well and keep it again for further mints

Make tadka with 1tbs ghee title jeera, onion sauté for golden brown add one chopped tomato

When it becomes mash add 12 tsp red Kashmir chilli garam masala 1/4 tsp

Garnish with coriander leaves and enjoy with salad,pickle and raita
