Ingredients

  1. 2 cupsgrits (regular, not instant)
  2. 3eggs
  3. 1/2chopped onion
  4. 2 tbspbutter
  5. 1 cup(cooked) chopped bacon, breakfast sausage or smoked sausage
  6. 1 tspgarlic salt

Cooking Instructions

    Preheat oven to 400 degrees.
    Add water, in proportion to a pot and bring to a boil. Once boiling, add butter, garlic salt and grits. Turn heat down to medium. Whisk gently so the grits don't stick.

    Break eggs and whisk into a separate bowl.

    When the grits are almost done (still retaining some firmness when tasted), remove from heat.

    Add grits to whisked eggs and stir gently. Add chopped onion, meats, and shredded cheese. Continue took stir gently until fully mixed.

    Coat muffin tin with non stick spray to keep the muffins from sticking.

    Using a ladle, fill each muffin tin with the grits mixture. They will not overflow when baking.

    Bake for approximately 15- 20 minutes or until firm.

    Garnish with shredded cheese of choice.
