Ingredients

Serves 4 servings
  1. 8 1/2 cupswater (2 liters)
  2. 1large onion
  3. Green onions or chives
  4. Parsley
  5. Chicken bouillon
  6. 4chicken pieces
  7. 3/4 cupshort-grain rice or sushi rice if unavailable (about 150 grams)
  8. Salt
  9. Black pepper
  10. Cumin
  11. MSG (optional)
  12. Annatto or achiote coloring

Steps

  1. 1

    Chop the onion into cubes or thin slices.

    Add the onion, parsley, and green onions to a pot with the water.

    Add the chicken bouillon (if you don't have chicken bouillon, use beef bouillon).

    When the water starts to boil, add the chicken pieces.

    When the chicken is almost cooked, season with salt, pepper, cumin, and MSG if using.

    Add the rice and more salt if needed.

    Remove the whole parsley and green onions from the pot.

    After about 15 minutes, when the rice is cooked, gently crack 1 egg into the soup while stirring, then turn off the heat.
