First, make the dough. Dissolve the paprika in water to give it a pink color.

Add salt and oil to the flour, then gradually add water to form a dough that is not too soft. You can add any food coloring you like. Let the dough rest while you prepare the kofta.

Grate the onion, squeeze out the juice, and set the juice aside. Add the grated onion to the ground beef.

Add the parsley and all the spices, then mix well. Shape the kofta into medium-sized logs, wetting your hands with the onion juice.

Refrigerate the kofta for 1 hour, then grill them or cook them as you prefer.

Next, divide the dough into lemon-sized balls before letting it rest. Roll out the dough as thin as possible and cook it in a skillet on the stovetop just until set, then remove so it doesn't dry out.

Prepare the tahini sauce by mixing all the ingredients together, then assemble your dish.

Cut the bread to the size of the cheddar slices, spread with tahini sauce, add a slice of cheddar, then the kofta. Close with a toothpick and garnish with olives or cherry tomatoes.
