A stew is great for clearing out the fridge, just throwing a bunch of ingredients in a casserole dish and letting it cook gently. Low and slow, the beef comes out melt in your mouth delicious but with a little kick and all the veggies make it really good for you

A stew is great for clearing out the fridge, just throwing a bunch of ingredients in a casserole dish and letting it cook gently. Low and slow, the beef comes out melt in your mouth delicious but with a little kick and all the veggies make it really good for you

Preheat the oven to gas 3 / 160C / 325F

Heat the oil in a frying pan and lightly brown the diced beef
- 3
Drain the beef then transfer to a large casserole dish
- 4
Stir in the rest of the ingredients then put the lid on the dish and put in the oven for 2.5 - 3 hours

Stir again then season to taste. You may like to add more Jerk seasoning or some black pepper
