Mix all the dry ingredients (excluding the grated apple) in one bown

In a separate bowl, combine the eggs, oil and milk (the wet ingredients).

Pour the wet ingredients into the dry ingredients and mix gently (i prefer using a blender because its faster and the batter comes out lump-free).

After mixing, gently fold in the grated apple

Preheat a non-stick pan on medium heat and add 1/4 cup scoops of the batter. cook for 3-4 minutes until bubbles start to form. Flip the pancake and cook for 1-2 minutes

Serve warm with toppings of your choice (maple syrup/honey/whipped cream etc).enjoy!!!
