Ingredients

2 1/2 cupsall-purpose flour (about 300 grams)
1/2 cuphot water, about 160°F (about 125 grams)
2 3/4 tablespoonscold water (about 40 grams)

Steps

Combine the potsticker wrapper ingredients and mix until no dry flour remains, using a mixer if you have one.

Place the dough in a plastic bag and let it rest for about 15 minutes.

Divide the dough into small pieces, about 10 grams each, and roll each into a thin wrapper.

Fill each wrapper with your desired filling.
