Ingredients

20 servings
  • 1 1/2 lbscarrots, cut into 1/2 inch slices
  • 2 lbskielbasa, sliced into 1/2 inch slices
  • 2 lbsground turkey
  • 58 ozcanned crushed tomatoes
  • 2 tbspvegetable oil
  • 1 tsponion powder
  • 2 1/2 cupssliced celery
  • 76 ozcannellini beans, drained
  • 3 1/2 cupswater
  • 2beef boullion cubes
  • 2bay leaves
  • 2 tspsalt
  • 2 tbspdried parsley
  • 1/4 cupbread crumbs

  1. 1

    Put carrots in pot. Put enough water in to cover carrots. Bring to a boil. Boil just until crisp-tender; drain well.

  2. 2

    Cook sausage & turkey in a skillet until turkey is cooked. Drain. Reserving drippings.

  3. 3

    In large soup pot, put reserved drippings & oil. Heat over medium heat until hot. Add carrots, celery, & onion powder. Cook, stirring frequently, until tender.

  4. 4

    Stir in sausage, turkey, beans, undrained tomatoes, water, bouillon cubes, bay leaves, salt, & parsley.

  5. 5

    Simmer, stirring occasionally, for 30 minutes.

  6. 6

    Remove & discard the bay leaves.

  7. 7

    Sprinkle bread crumbs on top of soup. Serve.
