Baked beans can be substituted with butter beans for a little twist. Roma tomatoes have less juice than the usual round tomatoes. We don't want to end up with soup!

Baked beans can be substituted with butter beans for a little twist. Roma tomatoes have less juice than the usual round tomatoes. We don't want to end up with soup!
Steps

Cut the chicken into cubes or strips and rub with the chicken spice. Set it aside.

Dice onion, bell pepper, and chilli peppers

Heat up 2 tbsp of cooking oil and fry the veggies in Step 2 until soft, stirring occasionally

In the meantime, grate the carrot and chop up the tomato
- 5
Add turmeric and/or curry powder and the chicken stock cube to the veggies in the pot and stir

Add the carrot, tomato and chicken to the pot, stir, then close the lid and let it cook at medium heat. Stir every minute or so.

Open the can of beans and drain most of the tomato sauce if it's a lot (I like using cheap canned beans for this but they tend to have a LOT of watery tomato sauce)

Once the chicken and veggies are done, turn off the stove and add the beans and rice. Stir well until everything is warmed up.

Serve and enjoy.
