Ingredients

  1. For the cookie crust:
  2. 1 cuporeo crumbs without sugar filling
  3. 1/2 cupunsalted butter, melted
  4. For the strawberry cheesecake filling:
  5. 2 packs(2 x 8 ounces) cream cheese, room temperature
  6. 1 cupgranulated sugar
  7. 1 cupsliced strawberries
  8. 400 mlwhipped cream, whip until thickened
  9. 2 tbsgelatin powder
  10. 60 mlwater
  11. For the strawberry topping:
  12. 2 cupsfresh strawberries
  13. 2 packsgelatin powder
  14. 1 cupwater

Cooking Instructions

  1. 1

    Mix oreo crumbs and melted butter until well combined. Press cookie mixture into the bottom of an 8” springform pan. Refrigerate for 60 minutes.

    Whip the cream cheese and sugar with a mixer. Add the sliced strawberries.

  3. 3

    In a small bowl, steam the gelatin and water until dissolved. Slowly pour the gelatin mixture until it’s fully incorporated.

    Add the whipped cream gradually. Mix until well combined.

  5. 5

    Pour the cheesecake mixture over the oreo crust and smooth it out with a rubber spatula. Refrigerate until hardened.

  6. 6

    Stack the fresh strawberries on top. Pour the gelatin mixture. For the last time, refrigerate for another hour.
