Stir-Fried Minced Pork with Holy Basil and Century Eggs

Boil the century eggs in boiling water over medium heat for about 15 minutes. Once done, transfer them to cold water, then peel off the shells.

Heat vegetable oil in a pan over medium heat. Once the oil is hot, carefully add the century eggs and fry until golden all over. Remove and drain on paper towels.

Heat a clean pan over medium heat and add vegetable oil. When the oil is hot, add the chopped garlic and roughly pounded chilies. Stir-fry until fragrant, then add the ground pork. Break up the pork so it doesn't clump. When the pork is almost cooked, season with soy sauce, oyster sauce, seasoning sauce, and sugar. Stir well, then add the holy basil leaves. Toss everything together and turn off the heat.

Cut each century egg in half.

Top the halved century eggs with the stir-fried pork and basil mixture. Serve immediately.
