Meatball Stew with Potatoes and Squash

For the meatballs:

Place the ground beef in a bowl with the parsley, 1 clove of garlic, half the onion (all finely chopped), the egg, and salt to taste. Mix everything together.

Once well mixed, add breadcrumbs until you can form meatballs that hold their shape.

Shape the meatballs.

In a pot, add a drizzle of oil and finely chop the remaining garlic clove, the other half of the onion, and the bell pepper.

Heat the pot and sear the meatballs (cook just the outside) so they don't fall apart.

Mash the canned tomatoes with a fork.

Once the meatballs are seared, add the tomato puree and the mashed tomatoes.

Peel and cut the squash, potatoes, and carrot.

When the mixture is hot, add the potatoes, squash, and carrot to the pot. Season to taste with salt, paprika, and oregano.

Cook for about 35 to 40 minutes (until the potatoes and squash are tender). Enjoy!
