Steps

Preheat oven to 220 degrees (or 200 degrees for fan assisted oven). Fry spring onions in olive oil over a medium heat for a few minutes

Then add the garlic and grated courgette to the pan. Fry for a further minute
- 3
Set aside to cool and then place eggs, parsley and yoghurt into a jug
- 4
Beat together and then add the courgette mixture. Mix well and season with salt and pepper
- 5
Line a preheated muffin tray with 6 muffin cases and distribute mixture evenly
- 6
Bake for 25 minutes and then serve with side salad
