Ingredients

  1. 1.5 cupdry shell pasta or short pasta of your choice
  2. 1ripe avocado
  3. 1large tomato or 2 med tomatoes
  4. 3 Tbspvegan mayonnaise
  5. 1.5 Tbsplime juice
  6. 1 tspgarlic paste
  7. Handfulcilantro, roughly chopped
  8. To tasteSalt & pepper,
  9. Chopped cilantro and/or jalapeno for garnish

Cooking Instructions

    Cook pasta according to the package instructions.

    Drain well, set aside to cool.

  3. 3

    Peel avocado and remove the pit.

  4. 4

    Put avocado in a food processor together with chopped cilantro, lime juice, mayonnaise and garlic paste.

    Blend it until it’s creamy.

  6. 6

    Add salt and pepper to taste.

  7. 7

    Transfer the avocado sauce to a medium sized bowl.

  8. 8

    Slice tomato(es) into small squares.

  9. 9

    Add sliced tomato to avocado sauce.

  10. 10

    Add cooked pasta and toss them well.

    Sprinkle chopped cilantro and/or jalapeño on top.
