Ingredients

  • 1medium-sized tilapia
  • 3 tablespoonsred curry paste
  • 1red chili, sliced
  • 3kaffir lime leaves, thinly sliced
  • Vegetable oil for frying
  • 2 tablespoonsfish sauce
  • 1/2-1 tablespoonpalm sugar or granulated sugar, to taste
  • 1 teaspoonsalt
  • 1/2 cupwater

Steps

  1. 1

    Clean the tilapia by scaling and gutting it, then rub with salt and fry until golden brown.

    Pour out most of the frying oil, leaving a little in the pan. Add the red curry paste and stir-fry until fragrant, then add all the seasonings.

    Taste and adjust for a salty-sweet flavor, then pour the sauce over the fried fish.
