Gosht ka halwa is an age old recipe which is on the verge of getting extinct. In the time of Mughal era when the chef has to impress the King, they used to make this Halwa and the king used to reward them. I had a chance to relish this amazing halwa at iftari get together. And believe me nobody can make out that this halwa has mutton in it. It tastes so rich and the aroma of saffron and kewra makes it heavenly. This halwa is a Royal treat in true sense. A perfect dessert to celebrate EID.

Ingredients

45 minutes
4 servings
  1. 225 gmmince mutton
  2. 1-1/2 cupfull fat milk
  3. 6 tbspclarified butter
  4. 15almonds soaked in warm water
  5. 15cashewnuts
  6. 4 tbspsugar
  7. 15 strandssaffron soaked in little warm water
  8. 1/2 cupgrated khoya
  9. 2 tspcardamom powder
  10. 1 tspkewra essence
  11. 1cinnamon stick
  12. As neededpistachios and cashewnuts for garnishing

Steps

45 minutes
  1. 1

    Wash the mince meat properly. Boil it with salt and half cinnamon stick for 4 to 5 minutes and then drain the water. Repeat this process twice. Wash it with water. Remove the stick from the meat. This process will help in making the mince softer and also to remove the meaty smell.

    In a pan heat clarified butter and add drained mince in it. Cook till it changes colour. It will take around 7 to 8 minutes.

    Now add milk and give it a stir.

    When milk starts to boil add sugar and cardamom powder and give it a mix.

    Make a paste of cashewnuts and de skinned almonds. When the sugar is dissolved in the milk add this paste into the mixture and stir continuously on low to medium heat.

    When the mixture starts thickening add grated khoya into the mixture and mix properly.

    Add saffron dipped in water into the mixture and mix nicely.

    Now add kewra essence and let it simmer till it leaves sides.

    Your Royal treat is ready. Garnish it with chopped pistachios and cashews and serve.
