Zarda is prepared on special auspicious occassions,addition of pineapple gives a nice sweet and tangent flavour to rice.

Zarda is prepared on special auspicious occassions,addition of pineapple gives a nice sweet and tangent flavour to rice.

Take a vessel,add pineaople peices and sugar,add water,just enough to cover pineapple,cook till sugar dissolves,cook furthur for 10 min,add 1tbs lemon yellow colour,keep it aside

Soak rice for half an hour

Heat water,when it comes to boil add rice and salt,cook till 3/4 done,strain,keep it aside.

Take broad pan,add ghee,fry cashews,remove and keep it aside,in the same ghee add boiled rice,stir gently,add cooked pineapple,cook till water evaporates,add cashews and cherries,put it on dum,on slow flame till rice is done(u can add pineapple essence to rice whike cooking)...garnish with cherries.
