Stuff Brinjal with potato wedges

Brinjal wash and dry for kitchen towel.

Potato cut in wedges and mix chop onion.

All dry masala mix well.

Brinjal cut in halves and slit in zig zag design and dry masala stuffed.

Leftover dry masala mix in potato wedges.

Take a nonstick pan add oil,oil smoke then add potato wedges stir fir 5 minutes then add brinjal and cool for slow heat.

Crispy fried brinjal r ready

Ready add lemon juice. Serve with parantha.
