Ingredients

serves 1 serving
  • 1 cupboiled yellow beans
  • 1medium red onion finely chopped
  • 2tomatoes peeled and chopped
  • 4 clovesgarlic chopped
  • 50 mlcan coconut milk
  • 1/2 teaspoontomato paste
  • to tasteSalt
  • Boiled sweet potatoes

Steps

  1. 1

    Fry the onions till golden brown

  2. 2

    Add the garlic, then tomatoes

  3. 3

    Cover with a lid and let the tomatoes mash

  4. 4

    Add the paste, salt, then coconut milk

  5. 5

    Add the beans and let it simmer gently

  6. 6

    Check the seasoning then serve with the sweet potatoes.

  7. 7

    It really goes down well with a cup of ginger, lemon and honey tea.
