Combine the onions, coriander seeds, dry red kashmiri chillies, garlic, ginger in a jar pot.

Blend in a mixer to a smooth paste using approx. ¼ cup of water. Keep aside.

Slit the brinjals in the centre to make a criss-cross mark that divides each brinjal into 4 parts joined at the stem.

Heat the oil in a pan and fry all vegetables like potato brinjal bitter gourd as u like. Keep a side.

Again heat the oil in a broad non-stick pan,add bay leaf cumin seed then add the prepared onion-tomato paste, turmeric powder, chilli powder, coriander-cumin powder, sugar and salt and mix well.

Add the lemon juice and coriander, mix well and cook on a medium flame for 3 to 4 minutes, while stirring continuously.

Make like a dry masala reddish colour.

Add all fried vegetables items.sprinkles some water and cover and cook for 5 min. Then serve.
