My mom used to make this for my bento lunch to school. Try Japanese green bell peppers if you can find them. Even richer in flavor!
Steps

Cut bell peppers and remove seeds. And cut into fine strips.

Add sesame oil in a pan. Once heated, add green peppers and sauté on medium heat until half cooked.

Add sake and cook for about a minute to allow the alcohol to evaporate. Add soy sauce and mirin. Cook until bell peppers are throughly cooked. (Lower heat if necessary.)

Add sesame seed and mix till evenly distributed.
