Prepare all ingredients for stir-frying. Soak the cut eggplant in water to prevent browning. Mix all the seasonings together.

Drain the eggplant and pat dry. Stir-fry in oil until slightly caramelized, then set aside.

Add a little oil to the pan. Add minced garlic, ginger, and dried chili. Stir-fry until fragrant, then add the ground pork.

Cook until the pork is done. Add the seasonings and a little broth, stirring to combine.

Add the eggplant back to the pan and stir-fry together. Adjust seasoning to taste.

Mix cornstarch with a little water and add to the pan. Add a bit of sesame oil and stir to combine.
